印象中黑糖好像是一塊塊黑黑的糖
帶有很濃很獨特的焦糖味道
老外的超市, 只有Brown Sugar, 顏色較淡, 也少了黑糖的香氣
而唐人超市的紅糖, 雖然隔了塑膠袋, 但仍可聞到有那股黑糖濃郁的香味
為什麼不見有黑糖在賣....
究竟黑糖與紅糖到底有何不同....
當然就要請教無所不知, 從不休息的網上老師
哦...原來傳統的紅糖與時下流行的黑糖都是用相同的方法製作出來的
只是熬煮糖漿的時間長短不同, 而呈現出來的顏色就有所不同
但在營養與功效上則是相同
黑糖糕是我懷念的古早味糕點
那天在電視上看到有位老師正在教做黑糖糕
趕緊把它記下來
材料:
黑糖3/4杯
雞蛋2個
黑糖水3 大匙 (黑糖1杯+熱水半杯的比例)
低筋麵粉3/4杯
Baking Power 泡打粉1/2茶匙
Baking Soda 小蘇打粉1/2茶匙(先用少許水調勻)
因為沒有黑糖, 就用台灣的紅糖來做
作法:
蛋與紅糖先打發約7分
篩入低筋麵粉, 泡打粉與小蘇打拌勻
慢慢加入黑糖水, 攪拌均勻
倒入有深度的容器內
水開, 大火蒸20分鐘
或用大同電鍋, 1 杯水
